Mel's food diary 21/01/13

Green Day

Lunch
Frittata with beans.  Fritatta is made using 3 eggs, green beans, peppers, onions, 2 chopped up Linda red onion sausage, 2 tbsp fat free fromage frais or yoghurt.  Whisk together, place in a frying pan and fry until it starts to set.  Sprinkle over some cheese (I use 3 syns worth, 26g and then say it's 1 syn for me between me, Lee and the kids) then throw under the grill to brown and finish cooking on the top.  Really yummy! (Great superfree too).  Beans are full of fibre and keep you full for longer, a great addition to a meal.. especially with worcester sauce!

Burger and chips!
Scottish Maris Piper potatos tasted like butter, delicious! Mixed with carrots as chips and seasoned by sprinkling over a chicken stock cube before cooking.  I highly recommend garlic salt - so tasty to cook on chips!  Tomato sauce (loads of superfree in this), Homemade Coleslaw (tastes SO naughty, 1tbsp mayo goes between all of us!), fried mushrooms, gherkins. Weight Watchers Petit Pain (1B) and the rest of my cheese allowance :)
