Sweet and Sour with Egg Fried Rice

Sweet and Sour with Egg Fried Rice
Syn free on Extra Easy day (Could substitute chicken for Quorn pieces on a green day)
Time to cook: 40 minutes
Serves: 2 greedy fat pigs

Ingredients

Sweet and sour
3 chicken breasts
2 peppers
1 onion
330ml diet coke
3 cloves of garlic
6 tbsp passata
1tbsp Worcestershire sauce

Egg fried rice
3 eggs
4 handfuls of basmati rice
1 chicken stock cube
1 handful of petit pois
3 Spring onions
1/2 onion

Method

1. Slice chicken breasts in to strips and dice onion, Chop your peppers into large pieces, place in to a frying pan sprayed with fry light and cook until chicken is lightly browned and onions have softened.
2. Add the garlic, chopped, and fry for 1 more minute.
3.  Add the worcestershire sauce, passata and coke, bring to the boil and then leave to simmer until you're left with a thick sauce.  This should take around 20 minutes.

4. Wash your rice and place in to a pan with boiling water from the kettle, filled to an inch above the rice. Add your handful of petit pois to the top. Bring to the boil.
5.  Add a stock cube and stir until dissolved, put a lid on the rice and turn down to low.
6. Spray a frying pan with fry light and soften half an onion, diced.  Crack in 2 eggs, leave it to set, then stir vigorously to create a chunky scrambled egg.
7.  After 10 minutes, check your rice.  If cooked, add to the frying pan with the egg and crack in one more egg.  Season well and add a dash of worcestershire sauce. Constantly tossing the rice over so it evenly frys.
 8.  Finely slice the spring onions and throw in to the rice, fry for one more minute then serve.
